Our neighbor’s recipe
Our neighbors at the farm were so excited to hear that we were growing rabbits on pasture -- their grandparents had raised rabbits and they were eager to break out this old recipe. This is another fail-safe recipe for rabbit novices… low and slow wins the day for tender rabbit!
Ingredients
2 rabbits, at least cut into quarters but cut smaller if desired
1/2 cup butter
3 onions, chopped small
3 - 5 bay leaves
Salt + black pepper to taste
Dash allspice
2 cups water
2 cups chicken broth
Preparation
- Saute onions in melted butter in large saucepan or dutch oven
- Add rabbit, cook slowly for a few minutes, turning once
- Add remaining ingredients
- Bring to a boil
- Reduce heat and simmer about 2 hours or until rabbit is fork tender
- Serve with rice or polenta

Tips
This recipe can be scaled down if you have one rabbit instead of two.
