Lamb
Good news, as of today we have our fall lamb cuts! There are a selection of cuts available including assorted chops, leg roasts, ribs, and ground. We also have all the odd stuff like heads, bones, kidney, heart, tongue and everyone’s favorite…testicles. We also have lamb bone broth for all your soup and broth needs.
This is the only lamb we will have until Fall 2021.
Corn-free rabbit meat
The final rabbit harvest of the season was completed this week. All rabbits are sold as frozen whole carcasses but are skinless and ready-to-cook, like the whole chickens are sold. We also packaged liver and mixed organs (kidney, heart, lung). Carcass sizes vary widely, from about 1.5 to over 5 lb.
Goat meat
We were amazed (and delighted) at the demand this year for our sustainably-raised, grass-fed goat meat. We had planned on taking goats to slaughter this fall, but we changed our minds and instead kept them (they were all female) as breeders for next year. So, we unfortunately won’t have goat meat until Fall 2021, but then we will have an incredible amount of goat meat! Patience is a virtue, I’ve heard.
Pork: bacon timer started
We are basically sold out of pork except for some organs, lard, fat, and bone broth. However, we’ve got pigs on the ground and butcher dates on the calendar, so we can officially start our bacon timer: only about 10 weeks left until Bacon Time! We should have pork ready to sell late January 2021.
Ready for lamb and rabbit?
We’ll be at the Tolland Farmers Market this Saturday November 21`from 10am to 12pm. With this short of notice, we aren’t able to accept and organize pre-orders, so just meet us there! We’ll have very full coolers and be ready to sell!
